María Moreno Pérez

María Moreno was born on June, 20th 1985 in Ciudad Real, Spain. In 2003, she obtained her highschool diploma in Science with distinction. Afterwards, she started her studies in Chemistry at the University of Castilla-La Mancha (UCLM). She got her degree in 2008, receiving the award for the best student record.  Then, she began as a Ph. D candidate (FPI Fellowship) at the Faculty of Chemistry (UCLM). She joined the graduate program of Sustainable Chemistry, within she is developing her thesis under the  supervision of Dr. Andrés Moreno and Dr. Mª Victoria Gómez.

Considering the unique biological properties that conjugated linoleic acids exhibit, her research is devoted to the synthesis and reactivity of those kinds of molecules. The introduction of microwave irradiation as energy source constitutes an ecofriendly aternative to improve the overall rocesses. In addition, she is also focused on the application of NMR techniques in Food Science. Hence, she has studied food matrices such as cheese, wine and meat, in order to determine their chemical composition as well as differences among several Spanish Protected Denominations of Origin. On the other hand, she did a stay of four months at the Università degli Studi di Padova (Italy) under the supervision of Prof. Stefano Mammi. During that time, she was involved in a project aimed towards the quantification of histamine in fish by NMR. In the same way, she also participated in a second project dealing with the clusterization of honeys according to their botanical origin.

Currently, as an extension of the applicability of NMR techniques, she has become interested in the field of metabolomics.
